Ingredients:
- 1 tablespoon (15 ml) olive oil
- 2 cloves garlic, minced
- 10 ounces (280g) fresh spinach, thoroughly washed and dried
- 1/4 teaspoon (1.25 ml) salt, or to taste
- 1/4 teaspoon (1.25 ml) black pepper, or to taste
- 1 tablespoon (15 ml) lemon juice
Instructions:
- Heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and cook until fragrant, about 30 seconds. Be careful not to burn it!
- Add the spinach to the skillet. It will seem like a lot, but it wilts down quickly.
- Using tongs, toss the spinach frequently until it is wilted and bright green, about 2-3 minutes.
- Season with salt and pepper. Stir in the lemon juice and serve immediately.
