Ingredients:

  • 1 tablespoon (15 ml) olive oil
  • 2 cloves garlic, minced
  • 10 ounces (280g) fresh spinach, thoroughly washed and dried
  • 1/4 teaspoon (1.25 ml) salt, or to taste
  • 1/4 teaspoon (1.25 ml) black pepper, or to taste
  • 1 tablespoon (15 ml) lemon juice

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and cook until fragrant, about 30 seconds. Be careful not to burn it!
  3. Add the spinach to the skillet. It will seem like a lot, but it wilts down quickly.
  4. Using tongs, toss the spinach frequently until it is wilted and bright green, about 2-3 minutes.
  5. Season with salt and pepper. Stir in the lemon juice and serve immediately.
