Ingredients:
- 1/2 cup (60g) all-purpose flour
- 2 large eggs
- 1/2 cup (120ml) whole milk
- 1 tbsp granulated sugar
- 1/4 tsp (1.5g) salt
- 1/2 tsp (2.5ml) vanilla extract
- 3 tbsp (42g) unsalted butter
Instructions:
- Preheat your oven to 425°F (218°C). Place your empty oven safe skillet directly on the rack to heat up. Note: A hot pan is the only way to get the rise.
- Toss the flour, eggs, milk, sugar, salt, and vanilla into your blender.
- Pulse for 20 seconds until the mixture is completely smooth and looks slightly frothy.
- Carefully pull the hot skillet out of the oven using a heavy duty oven mitt.
- Add the 3 tbsp of butter and swirl it around until it's melted and foaming.
- Immediately pour your blender batter into the center of the skillet.
- Return the skillet to the oven quickly to keep the heat in.
- Bake for 15-20 minutes until the edges are deeply browned and the center has a slight jiggle.
- Remove from the oven and let it sit for 1 minute before topping.
