Ingredients:

  • 1 head of garlic
  • 1 tablespoon olive oil (15 ml)
  • Pinch of sea salt
  • Pinch of freshly ground black pepper
  • Optional: A few sprigs of fresh thyme or rosemary

Instructions:

  1. Preheat your oven to 400°F (200°C / Gas Mark 6).
  2. Cut the top off the head of garlic to expose the individual cloves. Cut off about 1/4 to 1/2 inch from the top.
  3. Place the garlic head in a small baking dish. Drizzle generously with olive oil, ensuring it seeps into the exposed cloves. Season with salt and pepper. If using herbs, tuck them around the garlic head.
  4. Cover the dish with foil (optional). Roast in the preheated oven for 45-60 minutes, or until the cloves are very soft and golden brown. Check after 45 minutes. If the top starts to burn, cover it with foil.
  5. Remove from the oven and let cool slightly. Once cool enough to handle, squeeze the roasted garlic cloves out of their skins. The cloves should slip out easily.
