Ingredients:
- 1 head of garlic
- 1 tablespoon olive oil (15 ml)
- Pinch of sea salt
- Pinch of freshly ground black pepper
- Optional: A few sprigs of fresh thyme or rosemary
Instructions:
- Preheat your oven to 400°F (200°C / Gas Mark 6).
- Cut the top off the head of garlic to expose the individual cloves. Cut off about 1/4 to 1/2 inch from the top.
- Place the garlic head in a small baking dish. Drizzle generously with olive oil, ensuring it seeps into the exposed cloves. Season with salt and pepper. If using herbs, tuck them around the garlic head.
- Cover the dish with foil (optional). Roast in the preheated oven for 45-60 minutes, or until the cloves are very soft and golden brown. Check after 45 minutes. If the top starts to burn, cover it with foil.
- Remove from the oven and let cool slightly. Once cool enough to handle, squeeze the roasted garlic cloves out of their skins. The cloves should slip out easily.
