Ingredients:

  • 2 ½ cups (320g) all-purpose flour
  • 1 tsp (5g) salt
  • 1 tbsp (12g) granulated sugar
  • 1 cup (226g) unsalted butter, cold and cubed
  • 6-8 tbsp (90-120ml) ice water
  • 6-8 medium apples (about 1.5 kg total), peeled, cored, and sliced
  • ¾ cup (150g) granulated sugar
  • 1 tbsp (8g) all-purpose flour
  • 1 tsp (5g) ground cinnamon
  • ¼ tsp (1g) ground nutmeg
  • 1 tbsp (15ml) lemon juice
  • 1 tbsp (15g) butter, to dot on top

Instructions:

  1. Combine flour, salt, and sugar in a bowl. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add ice water until the dough comes together. Divide into two disks, wrap in plastic, and chill for at least 30 minutes.
  2. In a large bowl, mix sliced apples with sugar, flour, cinnamon, nutmeg, and lemon juice. Let sit for 10-15 minutes to allow the juices to meld.
  3. Preheat the oven to 425°F (220°C). Roll out one dough disk and fit it into the pie dish. Fill with apple mixture and dot with butter. Roll out the second dough disk and place it over the filling. Trim and crimp the edges to seal. Cut slits in the top to allow steam to escape.
  4. Place the pie on a baking sheet (to catch drips) and bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbling. Let cool before serving.
