Ingredients:

  • 3 1/2 cups (420g) all-purpose flour, plus more for dusting
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1/2 cup (113g or 1 stick) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • 1 cup (120g) powdered sugar, for dusting

Instructions:

  1. Whisk together flour, baking soda, spices, and salt in a large bowl.
  2. In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in molasses, egg, vanilla extract, and orange zest (if using) until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Cover the dough and chill in the refrigerator for at least 2 hours, or preferably overnight.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Roll chilled dough into small (about 1-inch) balls. Roll each ball in powdered sugar to coat evenly.
  8. Place cookies on prepared baking sheets, leaving a little space between them. Bake for 12-15 minutes, or until the edges are lightly golden brown and the centers are set.
  9. Let cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Once cooled, dust generously with more powdered sugar, if desired.
