Ingredients:
- 3 1/2 cups (420g) all-purpose flour, plus more for dusting
- 1 teaspoon baking soda
- 1/2 teaspoon ground cloves
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon salt
- 1/2 cup (113g or 1 stick) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1/2 cup (120ml) molasses
- 1 large egg
- 1 teaspoon vanilla extract
- Zest of 1 orange
- 1 cup (120g) powdered sugar, for dusting
Instructions:
- Whisk together flour, baking soda, spices, and salt in a large bowl.
- In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in molasses, egg, vanilla extract, and orange zest (if using) until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Cover the dough and chill in the refrigerator for at least 2 hours, or preferably overnight.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Roll chilled dough into small (about 1-inch) balls. Roll each ball in powdered sugar to coat evenly.
- Place cookies on prepared baking sheets, leaving a little space between them. Bake for 12-15 minutes, or until the edges are lightly golden brown and the centers are set.
- Let cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Once cooled, dust generously with more powdered sugar, if desired.
