Ingredients:
- 2-3 lbs (900-1350 g) baby back pork ribs
- 1 tablespoon (15 g) salt
- 1 tablespoon (15 g) black pepper
- 1 tablespoon (15 g) smoked paprika
- ½ cup (120 ml) ketchup
- ¼ cup (60 ml) apple cider vinegar
- ¼ cup (50 g) brown sugar
- 2 tablespoons (30 ml) soy sauce
- 2 teaspoons (10 g) garlic powder
- 1 teaspoon (5 g) onion powder
- 1 teaspoon (5 g) Worcestershire sauce
- ½ teaspoon (2 g) black pepper
- 1 tablespoon (15 ml) hot sauce (optional)
Instructions:
- Prepare the ribs by removing the silver skin from the back.
- Season the ribs with salt, black pepper, and smoked paprika. Allow them to rest.
- In a saucepan, combine all Sweet Whomp Sauce ingredients. Cook over medium heat until the sugar dissolves.
- Preheat the grill to medium heat (about 300°F/150°C).
- Wrap the seasoned ribs in aluminum foil to retain moisture. Grill for 1.5 hours.
- Unwrap the ribs, baste with Sweet Whomp Sauce, and continue grilling for an additional 30 minutes until caramelized.
- Remove from grill and let rest for 10 minutes before slicing.
