Ingredients:

  • 2-3 lbs (900-1350 g) baby back pork ribs
  • 1 tablespoon (15 g) salt
  • 1 tablespoon (15 g) black pepper
  • 1 tablespoon (15 g) smoked paprika
  • ½ cup (120 ml) ketchup
  • ¼ cup (60 ml) apple cider vinegar
  • ¼ cup (50 g) brown sugar
  • 2 tablespoons (30 ml) soy sauce
  • 2 teaspoons (10 g) garlic powder
  • 1 teaspoon (5 g) onion powder
  • 1 teaspoon (5 g) Worcestershire sauce
  • ½ teaspoon (2 g) black pepper
  • 1 tablespoon (15 ml) hot sauce (optional)

Instructions:

  1. Prepare the ribs by removing the silver skin from the back.
  2. Season the ribs with salt, black pepper, and smoked paprika. Allow them to rest.
  3. In a saucepan, combine all Sweet Whomp Sauce ingredients. Cook over medium heat until the sugar dissolves.
  4. Preheat the grill to medium heat (about 300°F/150°C).
  5. Wrap the seasoned ribs in aluminum foil to retain moisture. Grill for 1.5 hours.
  6. Unwrap the ribs, baste with Sweet Whomp Sauce, and continue grilling for an additional 30 minutes until caramelized.
  7. Remove from grill and let rest for 10 minutes before slicing.
