Ingredients:
- 1 Large Fresh Pineapple (approx. 1.5kg / 3.3 lbs)
- 1 tbsp neutral oil or melted ghee
- 1/4 cup dark brown sugar
- 2 tbsp honey or agave syrup
- 1 tsp ground cinnamon
- 1/2 tsp smoked paprika
- 1 tbsp fresh lime juice
- 1 pinch sea salt
Instructions:
- Peel the fruit and remove the 'eyes,' then slice it into rounds or wedges about 3/4 inch thick.
- Pat each piece of fruit bone dry with a paper towel. This is vital for preventing steaming.
- In a small bowl, whisk together the 1 tbsp ghee, 1/4 cup dark brown sugar, and 2 tbsp honey until smooth.
- Fold in the 1 tsp cinnamon, 1/2 tsp smoked paprika, and a pinch of salt.
- Bring your grill or pan to a solid medium high heat. You should only be able to hold your hand over it for 3 seconds.
- Brush one side of the pineapple slices generously with the glaze, then immediately add the 1 tbsp lime juice to the remaining glaze.
- Place the glazed side down on the hot grates. Cook for 4 minutes without moving them until dark lines appear.
- Brush the top side while the bottom sears, then flip carefully using a flat spatula.
- Sear the second side for another 3 to 4 minutes until the fruit feels slightly tender when pressed.
- Remove from heat and let them sit for 2 minutes. This allows the hot sugar to 'set' into a crispy shell.
