Ingredients:
- 2 large sweet potatoes (approx. 700g / 1.5 lbs total), scrubbed and cut into 1/2-inch thick rounds (1.25 cm)
- 2 tablespoons olive oil (30 ml)
- 1/2 teaspoon kosher salt (2.5 ml)
- 1/4 teaspoon black pepper (1.25 ml)
- 4 tablespoons unsalted butter (57g / 2 oz), softened
- 1 tablespoon finely chopped chipotle pepper in adobo sauce (15 ml)
- 1 tablespoon fresh lime juice (15 ml)
- 1 teaspoon lime zest (5 ml)
- 1/4 teaspoon garlic powder (1.25 ml)
- Pinch of salt
Instructions:
- Toss sweet potato rounds with olive oil, salt, and pepper in a bowl. Ensure they are evenly coated.
- Preheat grill to medium heat (about 350-400°F / 175-200°C). Make sure the grates are clean!
- Place sweet potato rounds directly on the grill grates in a single layer. Cook for about 5-7 minutes per side, or until tender and slightly charred, flipping halfway through.
- While the sweet potatoes are grilling, combine softened butter, chipotle pepper, lime juice, lime zest, garlic powder, and salt in a bowl. Mix well until evenly combined.
- Remove sweet potatoes from the grill and immediately brush or spoon with chipotle-lime butter. Serve hot.
