Ingredients:

  • 4 large boneless, skinless chicken thighs (1.5 lbs or 680 g)
  • 1/4 cup (60 mL) olive oil
  • 2 tablespoons (30 mL) lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon (15 g) chili powder
  • 1 teaspoon (5 g) smoked paprika
  • 1 teaspoon (5 g) ground cumin
  • 1 teaspoon (5 g) onion powder
  • 1/2 teaspoon (2.5 g) cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • Fresh cilantro, chopped (optional)
  • Lime wedges (optional)

Instructions:

  1. In a bowl, combine olive oil, lime juice, minced garlic, chili powder, smoked paprika, cumin, onion powder, cayenne pepper, salt, and black pepper. Whisk until well combined.
  2. Place chicken thighs in a resealable plastic bag or shallow dish. Pour marinade over the chicken
  3. Preheat your grill to medium-high heat (around 400°F or 200°C). Oil the grill grates to prevent sticking.
  4. Remove chicken from marinade, shaking off excess. Place chicken on the grill and close the lid. Grill for 7-10 minutes on one side.
  5. Flip chicken and continue grilling for an additional 7-10 minutes, or until internal temperature reaches 165°F (74°C).
  6. Remove chicken from grill and let it rest for 5 minutes. Slice and garnish with fresh cilantro and lime wedges before serving.
