Ingredients:
- 4 large boneless, skinless chicken thighs (1.5 lbs or 680 g)
- 1/4 cup (60 mL) olive oil
- 2 tablespoons (30 mL) lime juice
- 2 cloves garlic, minced
- 1 tablespoon (15 g) chili powder
- 1 teaspoon (5 g) smoked paprika
- 1 teaspoon (5 g) ground cumin
- 1 teaspoon (5 g) onion powder
- 1/2 teaspoon (2.5 g) cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- Fresh cilantro, chopped (optional)
- Lime wedges (optional)
Instructions:
- In a bowl, combine olive oil, lime juice, minced garlic, chili powder, smoked paprika, cumin, onion powder, cayenne pepper, salt, and black pepper. Whisk until well combined.
- Place chicken thighs in a resealable plastic bag or shallow dish. Pour marinade over the chicken
- Preheat your grill to medium-high heat (around 400°F or 200°C). Oil the grill grates to prevent sticking.
- Remove chicken from marinade, shaking off excess. Place chicken on the grill and close the lid. Grill for 7-10 minutes on one side.
- Flip chicken and continue grilling for an additional 7-10 minutes, or until internal temperature reaches 165°F (74°C).
- Remove chicken from grill and let it rest for 5 minutes. Slice and garnish with fresh cilantro and lime wedges before serving.
