Ingredients:

  • 1 lb (450g) ground beef (80% lean)
  • 1 medium onion, diced
  • 1 bell pepper (any color), diced
  • 2 cloves garlic, minced
  • 1 (14.5 oz / 410g) can diced tomatoes, undrained
  • 2 (15 oz / 425g) cans kidney beans, drained and rinsed
  • 1 (15 oz / 425g) can black beans, drained and rinsed
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt (to taste)
  • ¼ teaspoon black pepper
  • 1 cup (240ml) beef broth or water

Instructions:

  1. Brown the Beef: Heat a skillet over medium-high heat. Add ground beef and cook until browned. Drain excess fat.
  2. Sauté Aromatics: In the same skillet, add diced onion, bell pepper, and garlic. Sauté until softened, about 3-4 minutes.
  3. Combine Ingredients in Crockpot: Add browned beef, sautéed vegetables, diced tomatoes (with juices), kidney beans, black beans, chili powder, cumin, smoked paprika, salt, pepper, and beef broth to the crockpot.
  4. Mix Well: Stir everything together until well combined.
  5. Cook: Cover and cook on low for 6 hours or high for 3 hours.
  6. Taste and Adjust: Before serving, taste and adjust seasoning if necessary.
