Ingredients:

  • 1 cup (227g) Unsalted Butter, cold and cubed
  • 2 cups (250g) All-Purpose Flour
  • 0.5 cup (100g) Light Brown Sugar, packed
  • 0.5 tsp Fine Sea Salt
  • 1 tsp Vanilla Extract
  • 0.5 cup (45g) Old Fashioned Rolled Oats
  • 16 oz (450g) Guava Paste
  • 1 tbsp Lime Juice

Instructions:

  1. Preheat your oven to 350°F (180°C) and line an 8x8 inch square baking pan with parchment paper, leaving an overhang for easy removal.
  2. Combine dry goods. Mix the flour, brown sugar, oats, and salt in a large bowl.
  3. Incorporate the butter. Use a pastry cutter to work the cold butter cubes into the flour until it looks like coarse crumbs.
  4. Reserve the topping. Take 1 cup of this mixture and set it aside for later.
  5. Press the base. Firmly press the remaining crumb mixture into the bottom of your lined 8x8 pan.
  6. Par bake the bottom. Bake for 15 minutes until the edges are just barely golden.
  7. Melt the guava. While the base bakes, heat the guava paste and lime juice in a saucepan over medium low heat until it is smooth and velvety.
  8. Layer the fruit. Pour the molten guava over the hot par baked crust, spreading it to the edges.
  9. Add the crumble. Sprinkle that reserved cup of dough over the top of the guava.
  10. Final bake. Bake for another 15 minutes until the topping is golden and the guava is bubbling.
  11. Allow the bars to cool completely in the pan before lifting them out by the parchment paper and slicing into 24 squares.
