Ingredients:
- 3 lbs chicken wings, split into flats and drums
- 1 tbsp baking powder
- 1 tsp kosher salt
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- 1 cup fresh mango purée
- 2 small habanero peppers, seeded and minced
- 3 tbsp honey
- 2 tbsp apple cider vinegar
- 1 tbsp soy sauce
- 1 tsp Sriracha
Instructions:
- Pat the chicken wings extremely dry with paper towels to ensure maximum crispiness.
- In a large bowl, toss wings with baking powder, salt, paprika, garlic powder, and onion powder until evenly coated.
- Place the coated wings on a wire rack in the refrigerator for 30 minutes uncovered to dry the skin.
- Arrange wings on a wire rack over a baking sheet or in a single layer in the air fryer basket.
- Cook in air fryer at 400°F (204°C) for 20-25 minutes, or in oven at 425°F (218°C) for 40-45 minutes, flipping halfway through until deep golden brown.
- Place mango purée, minced habanero, honey, apple cider vinegar, soy sauce, and Sriracha in a food processor and blend until smooth.
- Toss the hot, crispy wings in the glaze until fully coated.
