Ingredients:

  • 60g habanero peppers, stemmed
  • 140g white onion, quartered
  • 15g garlic, peeled
  • 30ml neutral oil
  • 120ml fresh orange juice
  • 15ml lime juice
  • 3g fine sea salt
  • 15g fresh cilantro, chopped

Instructions:

  1. Preheat your broiler to high. Toss the habaneros, quartered onion, and garlic cloves in 30ml of oil on a rimmed baking sheet.
  2. Place the baking sheet under the broiler for 5–8 minutes until the pepper skins blister and develop a deep mahogany-colored char.
  3. Remove the pan from the oven and let the vegetables sit for 2 minutes to cool slightly.
  4. Transfer the roasted vegetables and all pan oil into a high-speed blender or food processor.
  5. Add the orange juice, lime juice, salt, and cilantro. Pulse until the mixture is a smooth, uniform orange hue.
