Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, chopped
- 2 celery stalks, chopped
- 6 cups chicken broth
- 1 cup uncooked white rice
- 2 cups cooked chicken, shredded
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- Salt to taste
- 1 tablespoon lemon juice
- Fresh parsley, chopped for garnish
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add diced onion, garlic, carrots, and celery and sauté until onions are translucent, about 5 minutes.
- Pour in chicken broth and bring to a boil.
- Add uncooked rice and seasonings.
- Reduce heat and simmer for 20 minutes, until rice is tender.
- Stir in shredded chicken and lemon juice.
- Simmer for an additional 5-10 minutes.
- Adjust seasoning as needed, garnish with parsley, and serve warm.
