Ingredients:
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 pound ground turkey
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon salt
- 1/4 cup all-purpose flour
- 1 cup beef broth
- 1 cup frozen peas and carrots mix (optional)
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 2 pounds Yukon Gold potatoes, peeled and quartered
- 1/2 cup milk
- 4 tablespoons unsalted butter
- Salt and pepper to taste
Instructions:
- Sauté onion, carrots, and celery in olive oil until softened.
- Add ground turkey, thyme, rosemary, salt, and pepper. Cook, breaking up the turkey, until browned. Drain off any excess grease. For delicious ground turkey recipes, browning is key!
- Stir in flour and cook for 1 minute. Gradually whisk in beef broth, tomato paste, and Worcestershire sauce. Bring to a simmer and cook until thickened, about 5 minutes. Stir in frozen peas and carrots (if using).
- Boil potatoes until tender. Drain and mash with milk and butter until smooth and creamy. Season with salt and pepper.
- Pour the turkey filling into the baking dish. Spread the mashed potatoes evenly over the top.
- Bake in a preheated oven at 375°F (190°C) for 25-30 minutes, or until the potatoes are lightly golden brown and the filling is bubbling.
- Cool slightly and serve. Let sit for 5-10 mins before serving.
