Ingredients:

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 pound ground turkey
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1 cup beef broth
  • 1 cup frozen peas and carrots mix (optional)
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 pounds Yukon Gold potatoes, peeled and quartered
  • 1/2 cup milk
  • 4 tablespoons unsalted butter
  • Salt and pepper to taste

Instructions:

  1. Sauté onion, carrots, and celery in olive oil until softened.
  2. Add ground turkey, thyme, rosemary, salt, and pepper. Cook, breaking up the turkey, until browned. Drain off any excess grease. For delicious ground turkey recipes, browning is key!
  3. Stir in flour and cook for 1 minute. Gradually whisk in beef broth, tomato paste, and Worcestershire sauce. Bring to a simmer and cook until thickened, about 5 minutes. Stir in frozen peas and carrots (if using).
  4. Boil potatoes until tender. Drain and mash with milk and butter until smooth and creamy. Season with salt and pepper.
  5. Pour the turkey filling into the baking dish. Spread the mashed potatoes evenly over the top.
  6. Bake in a preheated oven at 375°F (190°C) for 25-30 minutes, or until the potatoes are lightly golden brown and the filling is bubbling.
  7. Cool slightly and serve. Let sit for 5-10 mins before serving.
