Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable or chicken broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 pound ground beef or turkey
  • 1 cup uncooked rice
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese (optional)
  • Fresh parsley, chopped for garnish (optional)

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent.
  3. Stir in minced garlic and diced bell pepper; cook for another 2-3 minutes.
  4. Push veggies to the side; add ground meat to the pot.
  5. Brown the meat, breaking it up with a spoon until no longer pink.
  6. Stir in diced tomatoes, broth, tomato paste, oregano, and paprika.
  7. Add uncooked rice; season with salt and pepper.
  8. Bring to a boil, then reduce heat to a simmer.
  9. Cover and let soup simmer for 20-25 minutes, or until rice is tender.
  10. Add corn in the last few minutes of cooking.
  11. Taste and adjust seasoning if necessary.
  12. Serve hot, topped with cheese and parsley if desired.
