Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable or chicken broth
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 pound ground beef or turkey
- 1 cup uncooked rice
- 1 cup corn, frozen or canned
- 1 cup shredded cheese (optional)
- Fresh parsley, chopped for garnish (optional)
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add diced onion and cook until translucent.
- Stir in minced garlic and diced bell pepper; cook for another 2-3 minutes.
- Push veggies to the side; add ground meat to the pot.
- Brown the meat, breaking it up with a spoon until no longer pink.
- Stir in diced tomatoes, broth, tomato paste, oregano, and paprika.
- Add uncooked rice; season with salt and pepper.
- Bring to a boil, then reduce heat to a simmer.
- Cover and let soup simmer for 20-25 minutes, or until rice is tender.
- Add corn in the last few minutes of cooking.
- Taste and adjust seasoning if necessary.
- Serve hot, topped with cheese and parsley if desired.
