Ingredients:
- 1 pound spicy Italian sausage
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 medium russet potatoes, diced
- 1 cup heavy cream
- 3 cups kale, stems removed and chopped
- Salt and pepper, to taste
- Optional: Red pepper flakes for added heat
Instructions:
- In the pot, heat olive oil over medium heat.
- Add the sausage and cook until browned, breaking it up with a spoon as it cooks (about 5-7 minutes).
- Add the diced onion and cook until translucent (about 3-4 minutes).
- Stir in garlic and cook until fragrant (about 30 seconds).
- Pour in the chicken broth and add the diced potatoes.
- Bring the mixture to a boil, then reduce to a simmer.
- Cook until the potatoes are tender (approximately 10-15 minutes).
- Stir in the heavy cream and chopped kale.
- Season with salt, pepper, and optional red pepper flakes.
- Cook for an additional 5 minutes until the kale is wilted and everything is heated through.
