Ingredients:

  • 1 pound spicy Italian sausage
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 medium russet potatoes, diced
  • 1 cup heavy cream
  • 3 cups kale, stems removed and chopped
  • Salt and pepper, to taste
  • Optional: Red pepper flakes for added heat

Instructions:

  1. In the pot, heat olive oil over medium heat.
  2. Add the sausage and cook until browned, breaking it up with a spoon as it cooks (about 5-7 minutes).
  3. Add the diced onion and cook until translucent (about 3-4 minutes).
  4. Stir in garlic and cook until fragrant (about 30 seconds).
  5. Pour in the chicken broth and add the diced potatoes.
  6. Bring the mixture to a boil, then reduce to a simmer.
  7. Cook until the potatoes are tender (approximately 10-15 minutes).
  8. Stir in the heavy cream and chopped kale.
  9. Season with salt, pepper, and optional red pepper flakes.
  10. Cook for an additional 5 minutes until the kale is wilted and everything is heated through.
