Ingredients:
- 2 ¼ teaspoons active dry yeast (7g)
- 1/2 cup granulated sugar (100g)
- 1 cup whole milk, warmed (240ml)
- 3 large eggs
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon salt
- 4 cups all-purpose flour (480g)
- 1/4 cup unsalted butter, melted (57g)
- Vegetable oil for frying
- Powdered sugar for serving
Instructions:
- In a bowl, mix warm milk, yeast, and sugar. Let it sit until frothy (about 5-10 minutes).
- Whisk in eggs and vanilla extract until smooth.
- In a large bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and melted butter. Stir until a dough forms.
- Transfer to a floured surface and knead for about 5-7 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise in a warm place until doubled in size (about 1-1.5 hours).
- Punch down the dough and roll it out on a floured surface to 1/4-inch thick.
- Cut the dough into 2-inch squares and let them rest for about 30 minutes.
- In a deep pan, heat vegetable oil to 350°F (175°C).
- Fry squares in batches, 2-3 minutes per side until golden brown. Use a slotted spoon to remove them and drain on paper towels.
- Generously dust warm beignets with powdered sugar before serving.
