Ingredients:

  • 4 medium sweet potatoes (about 2 pounds or 900 grams)
  • 1/2 cup (100 grams) packed brown sugar
  • 1/4 cup (60 ml) unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup (240 ml) water
  • Chopped pecans or walnuts for topping
  • Marshmallows (optional)

Instructions:

  1. Peel the sweet potatoes and cut them into 1-inch cubes.
  2. In a large pot, combine sweet potatoes with water. Bring to a boil, then reduce to a simmer and cook until tender, about 10-15 minutes. Drain and set aside.
  3. In the same pot, melt the butter over medium heat. Stir in brown sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.
  4. Gently fold in the cooked sweet potatoes into the glaze mixture, ensuring they are well coated.
  5. Transfer the sweet potato mixture to a baking dish. Bake in a preheated oven at 350°F (175°C) for about 15-20 minutes or until the glaze is bubbly.
  6. Garnish with chopped nuts or marshmallows if desired, and serve warm.
