Ingredients:
- 4 medium sweet potatoes (about 2 pounds or 900 grams)
- 1/2 cup (100 grams) packed brown sugar
- 1/4 cup (60 ml) unsalted butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup (240 ml) water
- Chopped pecans or walnuts for topping
- Marshmallows (optional)
Instructions:
- Peel the sweet potatoes and cut them into 1-inch cubes.
- In a large pot, combine sweet potatoes with water. Bring to a boil, then reduce to a simmer and cook until tender, about 10-15 minutes. Drain and set aside.
- In the same pot, melt the butter over medium heat. Stir in brown sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.
- Gently fold in the cooked sweet potatoes into the glaze mixture, ensuring they are well coated.
- Transfer the sweet potato mixture to a baking dish. Bake in a preheated oven at 350°F (175°C) for about 15-20 minutes or until the glaze is bubbly.
- Garnish with chopped nuts or marshmallows if desired, and serve warm.
