Ingredients:
- 1 large egg yolk
- 2 tsp Dijon mustard
- 0.75 cup neutral oil
- 0.25 cup extra virgin olive oil
- 4 cloves fresh garlic
- 1.5 tbsp freshly squeezed lemon juice
- 0.5 tsp sea salt
- 0.25 tsp black pepper
Instructions:
- Place finely grated garlic and lemon juice in the bottom of a jar or bowl. Let it sit for 3 minutes to bloom the garlic and mellow its sharp flavor.
- Add the room-temperature egg yolk and Dijon mustard to the garlic-lemon mixture and whisk until combined.
- Slowly drizzle in the neutral oil one teaspoon at a time while whisking vigorously or using an immersion blender until a thick, pale emulsion forms.
- Once stable, pour the extra virgin olive oil in a thin, steady stream while continuing to blend. Fold in the sea salt and black pepper.
