Ingredients:

  • 2 Tablespoons Dried Oregano (preferably Mediterranean)
  • 5 Tablespoons Dried Basil
  • 1 Tablespoon Dried Marjoram
  • 1 Teaspoon Dried Thyme
  • 1 Teaspoon Dried Rosemary, finely crushed
  • 1/2 Teaspoon Dried Sage (optional, adds earthiness)
  • 1/2 Teaspoon Garlic Powder
  • 1/4 Teaspoon Onion Powder
  • 1/4 Teaspoon Crushed Red Pepper Flakes

Instructions:

  1. Prepare the Rosemary: Place the 1 teaspoon of dried rosemary into a mortar and pestle (or use the back of a spoon on a cutting board). Grind or crush vigorously until the coarse needles are broken down into small, fine flakes. This step is crucial to prevent an unpleasant, coarse texture.
  2. Gather Remaining Herbs: Ensure all other dried herbs (oregano, basil, marjoram, thyme, and optional sage) are ready for blending.
  3. Combine Dry Ingredients: Pour the crushed rosemary, basil, oregano, marjoram, thyme, and sage (if using) into your mixing bowl or directly into the final storage jar.
  4. Add Savoury Elements: Measure and add the garlic powder, onion powder, and crushed red pepper flakes.
  5. Mix Thoroughly: If using a bowl, whisk the mixture vigorously for 30 seconds to ensure the powders are evenly distributed among the flaky herbs.
  6. Seal and Shake (The Pro Method): If using a jar, secure the lid tightly. Shake the jar extremely well for 1 minute, rotating the jar as you shake, to fully integrate all the spices. This is generally more effective than whisking.
  7. Rest and Store: Label the jar with the date. Allow the blend to sit for at least 24 hours before use so the flavors can 'marry' and fully awaken. Store in a cool, dark place.
