Ingredients:

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1/3 cup honey
  • 2 tbsp soy sauce
  • 3 cloves garlic, minced
  • 1 tbsp apple cider vinegar
  • 1/4 tsp red pepper flakes

Instructions:

  1. Prep the meat. Pat the chicken thighs completely dry with paper towels. Note: Any surface moisture will steam the meat instead of searing it.
  2. Season. Sprinkle salt and pepper evenly on both sides of the chicken.
  3. Mix the glaze. In a small bowl, whisk together the honey, soy sauce, minced garlic, vinegar, and red pepper flakes until smooth.
  4. Heat the pan. Pour olive oil into a 12 inch cast iron or stainless steel skillet over medium high heat. Wait until the oil is shimmering.
  5. Sear the chicken. Add thighs to the pan. Cook for 5-7 minutes per side until a deep, golden brown crust forms.
  6. Lower the heat. Turn the burner down to medium. This prevents the honey from burning the second it hits the pan.
  7. Add the glaze. Pour the honey garlic mixture directly over the chicken.
  8. Coat and simmer. Use tongs to flip the chicken constantly for 3-5 minutes until the sauce thickens into a glossy glaze.
  9. Rest. Remove from heat and let the chicken sit for 2 minutes before serving.
