Ingredients:

  • 2 lbs (900g) Sweet Potatoes, peeled and cut into 1-inch cubes
  • 1 lb (450g) Smoked or Mild Pork Sausages
  • 1 medium Red Onion, cut into thick wedges
  • 2 Tbsp Olive Oil
  • Salt and Black Pepper, to taste
  • 1/4 cup (60ml) Honey
  • 3 Tbsp Soy Sauce (or Tamari)
  • 4 cloves Garlic, minced very finely
  • 1 Tbsp Apple Cider Vinegar
  • 1 tsp Smoked Paprika
  • 2 Tbsp Fresh Parsley, chopped (optional garnish)
  • 1 tsp Sesame Seeds, toasted (optional garnish)

Instructions:

  1. Preheat oven to 400°F (200°C). Lightly grease a large baking sheet or line with parchment paper.
  2. In a large bowl, toss the cubed sweet potatoes, onion wedges, sausages, olive oil, salt, and pepper until everything is evenly coated.
  3. Spread the mixture onto the prepared baking sheet in a single layer. Roast for 20 minutes.
  4. While the base roasts, whisk together the honey, soy sauce, minced garlic, apple cider vinegar, and smoked paprika in a small bowl until fully emulsified to create the glaze.
  5. Remove the tray from the oven. Drizzle about two-thirds of the honey-garlic glaze over the sausage and vegetables, tossing gently on the tray to coat. Return to the oven and roast for another 15–20 minutes, or until the sweet potatoes are tender and the sausages are browned.
  6. Remove from the oven. Drizzle the remaining reserved glaze over the hot bake for an extra glossy finish. Sprinkle with fresh parsley and sesame seeds before serving immediately.
