Ingredients:
- 1 small head of green cabbage, finely shredded (about 4 cups or 350g)
- 1 large carrot, grated (about 1 cup or 130g)
- 1 small red onion, finely sliced (optional)
- ½ cup mayonnaise (120ml)
- 2 tablespoons apple cider vinegar (30ml)
- 1 tablespoon sugar (15g)
- 1 teaspoon Dijon mustard (5g)
- Salt and pepper to taste
Instructions:
- Finely shred the cabbage and place it in a large mixing bowl.
- Grate the carrot and add it to the bowl.
- If using, slice the red onion thinly and add it to the bowl.
- In a separate bowl, combine the mayonnaise, apple cider vinegar, sugar, and Dijon mustard. Whisk until smooth and well combined.
- Pour the dressing over the shredded vegetables and toss everything together until well coated.
- Taste and add salt and pepper as needed.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
- Give the coleslaw a good toss before serving. Enjoy!
