Ingredients:

  • 1 small head of green cabbage, finely shredded (about 4 cups or 350g)
  • 1 large carrot, grated (about 1 cup or 130g)
  • 1 small red onion, finely sliced (optional)
  • ½ cup mayonnaise (120ml)
  • 2 tablespoons apple cider vinegar (30ml)
  • 1 tablespoon sugar (15g)
  • 1 teaspoon Dijon mustard (5g)
  • Salt and pepper to taste

Instructions:

  1. Finely shred the cabbage and place it in a large mixing bowl.
  2. Grate the carrot and add it to the bowl.
  3. If using, slice the red onion thinly and add it to the bowl.
  4. In a separate bowl, combine the mayonnaise, apple cider vinegar, sugar, and Dijon mustard. Whisk until smooth and well combined.
  5. Pour the dressing over the shredded vegetables and toss everything together until well coated.
  6. Taste and add salt and pepper as needed.
  7. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
  8. Give the coleslaw a good toss before serving. Enjoy!
