Ingredients:

  • 2 large limes, washed and cut into quarters (approx. 200g)
  • 1 teaspoon salt (5g)
  • 1 teaspoon turmeric powder (2g)
  • 1 teaspoon red chili powder (2g)
  • 1 teaspoon mustard seeds (2g)
  • ½ teaspoon fenugreek seeds (1g)
  • ½ teaspoon asafoetida (hing) (1g)
  • 2 tablespoons jaggery or brown sugar, grated (30g)
  • 2-3 green chilies, slit (optional for extra heat)
  • 1 teaspoon black salt (optional)
  • Fresh coriander leaves for garnish (optional)

Instructions:

  1. Wash the limes thoroughly and cut them into quarters.
  2. In a mixing bowl, combine salt, turmeric, red chili powder, mustard seeds, fenugreek seeds, and asafoetida.
  3. Add the lime pieces to the bowl with spices and mix gently to coat the limes evenly.
  4. Sprinkle jaggery (or brown sugar) over the lime mixture and blend well.
  5. If desired, add slit green chilies for extra spice and mix.
  6. Transfer the lime-spice mixture into the glass jar, pressing down to pack tightly.
  7. Seal the jar and let it sit in the refrigerator for at least 30 minutes before serving to enhance flavor.
