- 2 lbs (900g) frozen boneless, skinless chicken breasts
- 1 cup (240ml) chicken broth (low sodium preferred)
- 1 tbsp (15ml) olive oil
- 1 tsp (5g) salt
- 1/2 tsp (2.5g) black pepper
- 1 tsp (3g) garlic powder
- 1/2 tsp (1.5g) onion powder
- 1/2 tsp (1.5g) dried thyme
- 1/4 tsp (0.75g) smoked paprika (optional, for a smoky flavour)
Instructions:
- Place the frozen chicken breasts in the Instant Pot.
- Pour in the chicken broth and drizzle with olive oil. Sprinkle with salt, pepper, garlic powder, onion powder, thyme, and smoked paprika (if using).
- Secure the Instant Pot lid, ensuring the valve is set to sealing. Cook on high pressure for 10 minutes per inch of chicken thickness.
- Allow the Instant Pot to naturally pressure release for 10 minutes. Then, manually release any remaining pressure.
- Use a meat thermometer to ensure the internal temperature of the chicken reaches 165°F (74°C). If not, reseal and cook for an additional 2-3 minutes.
- Remove the chicken from the Instant Pot. Shred with two forks or slice.
