  • 2 lbs (900g) frozen boneless, skinless chicken breasts
  • 1 cup (240ml) chicken broth (low sodium preferred)
  • 1 tbsp (15ml) olive oil
  • 1 tsp (5g) salt
  • 1/2 tsp (2.5g) black pepper
  • 1 tsp (3g) garlic powder
  • 1/2 tsp (1.5g) onion powder
  • 1/2 tsp (1.5g) dried thyme
  • 1/4 tsp (0.75g) smoked paprika (optional, for a smoky flavour)

Instructions:

  1. Place the frozen chicken breasts in the Instant Pot.
  2. Pour in the chicken broth and drizzle with olive oil. Sprinkle with salt, pepper, garlic powder, onion powder, thyme, and smoked paprika (if using).
  3. Secure the Instant Pot lid, ensuring the valve is set to sealing. Cook on high pressure for 10 minutes per inch of chicken thickness.
  4. Allow the Instant Pot to naturally pressure release for 10 minutes. Then, manually release any remaining pressure.
  5. Use a meat thermometer to ensure the internal temperature of the chicken reaches 165°F (74°C). If not, reseal and cook for an additional 2-3 minutes.
  6. Remove the chicken from the Instant Pot. Shred with two forks or slice.
