Ingredients:

  • 3 large ripe bananas (about 1.5 cups mashed, or 750g)
  • 1/3 cup (75g) unsalted butter, melted
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract (5ml)
  • 1 teaspoon baking soda (5g)
  • Pinch of salt
  • 3/4 cup (150g) granulated sugar
  • 1 cup (125g) all-purpose flour
  • Optional: 1/2 cup (60g) chopped walnuts or pecans

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease the loaf pan with butter or line it with parchment paper.
  3. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  4. Stir in the melted butter, beaten egg, and vanilla extract into the mashed bananas until well combined.
  5. Sprinkle the baking soda and salt over the mixture, stirring to combine. Then add the sugar and flour, mixing just until incorporated. If using, fold in walnuts.
  6. Pour the batter into the prepared loaf pan. Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
