Ingredients:
- 3 large ripe bananas (about 1.5 cups mashed, or 750g)
- 1/3 cup (75g) unsalted butter, melted
- 1 large egg, beaten
- 1 teaspoon vanilla extract (5ml)
- 1 teaspoon baking soda (5g)
- Pinch of salt
- 3/4 cup (150g) granulated sugar
- 1 cup (125g) all-purpose flour
- Optional: 1/2 cup (60g) chopped walnuts or pecans
Instructions:
- Preheat your oven to 350°F (175°C).
- Grease the loaf pan with butter or line it with parchment paper.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in the melted butter, beaten egg, and vanilla extract into the mashed bananas until well combined.
- Sprinkle the baking soda and salt over the mixture, stirring to combine. Then add the sugar and flour, mixing just until incorporated. If using, fold in walnuts.
- Pour the batter into the prepared loaf pan. Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
