Ingredients:

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 10 ounces fresh spinach, thoroughly washed and dried
  • 4 ounces cream cheese, softened
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • ¼ teaspoon nutmeg
  • Salt and pepper to taste
  • ½ cup finely grated Parmesan cheese

Instructions:

  1. Preheat oven to 400°F (200°C). Spread Parmesan cheese in thin, even circles on a baking sheet lined with parchment paper. Bake until golden brown and crisp. Let cool completely before breaking into pieces.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, being careful not to burn it.
  3. Add spinach to the skillet and cook, stirring frequently, until wilted. Drain any excess liquid.
  4. Reduce heat to low. Stir in softened cream cheese, heavy cream, Parmesan cheese, and nutmeg. Season with salt and pepper to taste.
  5. Simmer for a few minutes, stirring occasionally, until the sauce is thickened and heated through. Spoon the creamed spinach into serving dishes. Top with broken Parmesan crisp pieces. Serve immediately.
