Ingredients:
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 10 ounces fresh spinach, thoroughly washed and dried
- 4 ounces cream cheese, softened
- ½ cup heavy cream
- ¼ cup grated Parmesan cheese
- ¼ teaspoon nutmeg
- Salt and pepper to taste
- ½ cup finely grated Parmesan cheese
Instructions:
- Preheat oven to 400°F (200°C). Spread Parmesan cheese in thin, even circles on a baking sheet lined with parchment paper. Bake until golden brown and crisp. Let cool completely before breaking into pieces.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, being careful not to burn it.
- Add spinach to the skillet and cook, stirring frequently, until wilted. Drain any excess liquid.
- Reduce heat to low. Stir in softened cream cheese, heavy cream, Parmesan cheese, and nutmeg. Season with salt and pepper to taste.
- Simmer for a few minutes, stirring occasionally, until the sauce is thickened and heated through. Spoon the creamed spinach into serving dishes. Top with broken Parmesan crisp pieces. Serve immediately.
