Ingredients:
- 1.5 cups (180g) all-purpose flour
- 1 cup (120g) graham cracker crumbs
- 0.5 tsp baking powder
- 0.25 tsp salt
- 0.75 cup (170g) unsalted butter, softened
- 0.5 cup (100g) granulated sugar
- 1 large egg
- 1 tbsp key lime zest
- 0.5 cup (120ml) sweetened condensed milk
- 3 tbsp key lime juice
- 0.5 tsp pure vanilla extract
- 1 pinch sea salt
Instructions:
- In a large mixing bowl, rub the granulated sugar and lime zest together with your fingertips until fragrant and damp.
- Add softened butter to the sugar and beat with a hand mixer on medium-high until light and fluffy (approx. 2 minutes). Incorporate the egg and vanilla extract.
- Whisk flour, graham cracker crumbs, baking powder, and salt. Gradually mix into the wet ingredients until a soft dough forms.
- Scoop 1.5-tablespoon portions of dough, roll into balls, and place 2 inches apart on parchment-lined sheets. Use a rounded measuring spoon to press a deep well into the center of each ball.
- In a small bowl, whisk sweetened condensed milk, lime juice, and a pinch of salt until the mixture thickens.
- Spoon approximately 1 teaspoon of the lime filling into each cookie well. Bake at 350°F (175°C) for 10 minutes or until the edges are barely golden.
