Ingredients:

  • 2 tablespoons ground allspice (24g)
  • 1 tablespoon dried thyme (3g)
  • 1 tablespoon ground scotch bonnet pepper (adjust to taste) (6g)
  • 1 tablespoon ground ginger (6g)
  • 1 tablespoon brown sugar (packed) (12g)
  • 1 tablespoon garlic powder (6g)
  • 1 tablespoon onion powder (6g)
  • 2 teaspoons ground cinnamon (4g)
  • 2 teaspoons ground nutmeg (4g)
  • 2 teaspoons ground black pepper (4g)
  • 1 teaspoon salt (6g)
  • 1/2 teaspoon ground cloves (1g)

Instructions:

  1. In a mixing bowl, measure and add allspice, thyme, scotch bonnet pepper, ginger, brown sugar, garlic powder, onion powder, cinnamon, nutmeg, black pepper, salt, and cloves.
  2. Whisk or stir the ingredients together until well combined and evenly distributed. Make sure there are no clumps of brown sugar.
  3. Give the seasoning a little taste (careful, it's got a kick!). Adjust the amount of scotch bonnet pepper to your liking. More for a proper burn, less if you're a bit of a wimp.
  4. Transfer the seasoning to an airtight container. Store in a cool, dark place for up to 6 months.
