Instructions:
- Measure out all required ingredients. Ensure the cottage cheese is cold. Zest and juice the lemon.
- Place the cottage cheese, Greek yogurt, sweetener, vanilla extract, and salt into a high-speed blender or food processor.
- Process the mixture, stopping frequently to scrape down the sides. Continue blending until the mixture is completely smooth and velvety, ensuring all curds are eliminated.
- Add the lemon zest and fresh lemon juice to the blended base. Pulse or blend briefly (just 3-4 quick bursts) to fully incorporate the citrus without making the mixture watery.
- Taste the pudding and adjust the sweetener or lemon juice if necessary, blending briefly after any additions.
- Pour the pudding into two small bowls or ramekins. Cover loosely and refrigerate for a minimum of 1 hour (ideally 3-4 hours) to allow the pudding to firm up and the flavours to fully develop.
- Garnish each serving with toasted nuts and fresh berries just before serving.
