  4. Add the lemon zest and fresh lemon juice to the blended base. Pulse or blend briefly (just 3-4 quick bursts) to fully incorporate the citrus without making the mixture watery.
  5. Taste the pudding and adjust the sweetener or lemon juice if necessary, blending briefly after any additions.
  6. Pour the pudding into two small bowls or ramekins. Cover loosely and refrigerate for a minimum of 1 hour (ideally 3-4 hours) to allow the pudding to firm up and the flavours to fully develop.
  7. Garnish each serving with toasted nuts and fresh berries just before serving.
