Ingredients:
- 1/4 cup (60 ml) olive oil
- 2 tablespoons fresh lemon juice (about 1 lemon)
- Zest of 1 lemon
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 (6-ounce or 170 g) mahi mahi fillets
- Lemon wedges for serving
Instructions:
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine olive oil, lemon juice, lemon zest, garlic, parsley, dill, salt, and pepper. Whisk until well blended.
- Place mahi mahi fillets in a baking dish. Pour the marinade over the fish, ensuring all fillets are coated. Let marinate for 10 minutes.
- Bake in the preheated oven for 15-20 minutes, until the fish flakes easily with a fork and the internal temperature reaches 145°F (63°C).
- Remove from the oven and serve with lemon wedges on the side.
