Ingredients:

  • 1/4 cup (60 ml) olive oil
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • Zest of 1 lemon
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 (6-ounce or 170 g) mahi mahi fillets
  • Lemon wedges for serving

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, lemon juice, lemon zest, garlic, parsley, dill, salt, and pepper. Whisk until well blended.
  3. Place mahi mahi fillets in a baking dish. Pour the marinade over the fish, ensuring all fillets are coated. Let marinate for 10 minutes.
  4. Bake in the preheated oven for 15-20 minutes, until the fish flakes easily with a fork and the internal temperature reaches 145°F (63°C).
  5. Remove from the oven and serve with lemon wedges on the side.
