Ingredients:
- 2 cups (400g) granulated white sugar
- 2 tablespoons (16g) cornstarch (or arrowroot powder)
Instructions:
- Place the granulated sugar and cornstarch into the canister of your high-speed blender or food processor.
- Ensure the lid is tight. Powdered sugar is extremely fine and will create 'sugar dust' if the seal isn't perfect.
- Process the sugar on the highest speed setting for 45 to 60 seconds until a cloud of fine white powder forms.
- Stop the machine and wait 10 seconds for the dust to settle. Rub a small amount between your fingers to ensure it feels fluffy and not gritty.
- Pour the mixture through a fine-mesh sieve into a bowl to aerate the sugar and remove any remaining granules.
- If the sugar became warm from blender friction, let it cool completely before sealing in an airtight container.
