Ingredients:

  • 2 cups (400g) granulated white sugar
  • 2 tablespoons (16g) cornstarch (or arrowroot powder)

Instructions:

  1. Place the granulated sugar and cornstarch into the canister of your high-speed blender or food processor.
  2. Ensure the lid is tight. Powdered sugar is extremely fine and will create 'sugar dust' if the seal isn't perfect.
  3. Process the sugar on the highest speed setting for 45 to 60 seconds until a cloud of fine white powder forms.
  4. Stop the machine and wait 10 seconds for the dust to settle. Rub a small amount between your fingers to ensure it feels fluffy and not gritty.
  5. Pour the mixture through a fine-mesh sieve into a bowl to aerate the sugar and remove any remaining granules.
  6. If the sugar became warm from blender friction, let it cool completely before sealing in an airtight container.
