Ingredients:
- 1 tablespoon olive oil (15 ml)
- 8 ounces Italian sausage, casings removed (225 g)
- 1/2 cup diced onion (1 medium onion) (75 g)
- 1 clove garlic, minced (1 clove)
- 5 ounces fresh spinach, roughly chopped (140 g)
- 1/2 teaspoon salt (2.5 ml)
- 1/4 teaspoon black pepper (1.2 ml)
- 8 large eggs (about 400g)
- 1/2 cup milk (120 ml)
- 1/4 cup heavy cream (60 ml) (optional, for extra richness)
- 1/4 teaspoon salt (1.2 ml)
- 1/8 teaspoon ground nutmeg (0.6 ml) (optional)
- 1 cup shredded cheddar cheese (115 g)
Instructions:
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat.
- Brown sausage, breaking it up with a spoon. Drain excess grease.
- Add onion and garlic; sauté until softened.
- Stir in spinach; cook until wilted.
- Season with salt and pepper.
- In a large bowl, whisk together eggs, milk, heavy cream (if using), salt, and nutmeg (if using).
- If using a separate skillet and baking dish, transfer the sausage mixture to the baking dish.
- Pour the egg mixture over the sausage mixture.
- Sprinkle with cheddar cheese.
- Bake for 35-40 minutes, or until the frittata is set and lightly golden brown. A knife inserted into the center should come out clean.
- Let the frittata cool completely in the baking dish.
- Cut into 9 squares.
