- 2 cups (300g) fresh mango, finely diced
- ½ cup (75g) red onion, finely diced
- ¼ cup (15g) fresh cilantro, chopped
- 1 to 2 habanero peppers, seeds removed and minced (approx. 15g)
- 2 tbsp (30ml) fresh lime juice
- ½ tsp (3g) kosher salt
Instructions:
- Peel the mango and cut the flesh into ¼-inch cubes. Finely dice the red onion and mince the habanero into small, consistent pieces to ensure even spice distribution.
- Transfer the diced mango, red onion, and minced habanero into a medium mixing bowl.
- Sprinkle the kosher salt over the mixture and pour in the fresh lime juice.
- Fold in the chopped cilantro using a silicone spatula, stirring gently to avoid bruising the mango cubes.
- Let the salsa sit for 5 minutes at room temperature to allow the salt to draw out the natural juices of the mango.
