Ingredients:

  • 2 cups (300g) fresh mango, finely diced
  • ½ cup (75g) red onion, finely diced
  • ¼ cup (15g) fresh cilantro, chopped
  • 1 to 2 habanero peppers, seeds removed and minced (approx. 15g)
  • 2 tbsp (30ml) fresh lime juice
  • ½ tsp (3g) kosher salt

Instructions:

  1. Peel the mango and cut the flesh into ¼-inch cubes. Finely dice the red onion and mince the habanero into small, consistent pieces to ensure even spice distribution.
  2. Transfer the diced mango, red onion, and minced habanero into a medium mixing bowl.
  3. Sprinkle the kosher salt over the mixture and pour in the fresh lime juice.
  4. Fold in the chopped cilantro using a silicone spatula, stirring gently to avoid bruising the mango cubes.
  5. Let the salsa sit for 5 minutes at room temperature to allow the salt to draw out the natural juices of the mango.
