Ingredients:
- 2 pints cherry tomatoes (900g)
- 16 oz fresh mozzarella balls (450g)
- 1 bunch fresh basil leaves
- 1/2 cup balsamic vinegar (120ml)
- 1 tablespoon honey or maple syrup (15ml) (optional)
- Extra virgin olive oil (optional)
- Sea salt and freshly ground black pepper to taste
Instructions:
- Prepare the Balsamic Glaze (Optional): In a small saucepan, combine balsamic vinegar and honey (or maple syrup, if using). Bring to a simmer over medium heat. Reduce heat to low and simmer gently for 5-7 minutes, or until the glaze thickens slightly and coats the back of a spoon. Set aside to cool slightly.
- Prep the Ingredients: Wash and dry the cherry tomatoes and basil leaves. Drain the mozzarella balls.
- Assemble the Skewers: Thread one cherry tomato, one mozzarella ball, and one basil leaf onto each skewer. Repeat until all ingredients are used. Aim for a visually appealing arrangement.
- Arrange and Garnish: Arrange the skewers on a serving platter. Drizzle lightly with extra virgin olive oil (optional). Season with sea salt and freshly ground black pepper to taste.
- Drizzle with Glaze: Drizzle the cooled balsamic glaze over the skewers just before serving.
