Ingredients:

  • 1 pound (454g) ground beef (80/20 blend)
  • 1 medium yellow onion, chopped (about 1 cup/150g)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (10.75 ounce/305g) can condensed cream of mushroom soup
  • 1/2 cup (120ml) milk (any kind will do, but whole milk adds richness)
  • 1 (10 ounce/283g) package frozen mixed vegetables (corn, peas, carrots), thawed
  • 1 (32 ounce/907g) bag frozen tater tots

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium-high heat, brown ground beef with onion. Drain off any excess grease.
  3. Stir in thyme, salt, and pepper into the cooked beef.
  4. In a large bowl, combine cream of mushroom soup and milk.
  5. Add the seasoned ground beef and thawed mixed vegetables to the soup mixture and stir well.
  6. Pour the beef and vegetable mixture into the prepared baking dish.
  7. Arrange the frozen tater tots in a single layer over the beef mixture.
  8. Bake in preheated oven for 30 minutes, or until the tater tots are golden brown and crispy.
  9. Let cool for a few minutes before serving.
