Ingredients:
- 1/2 cup white miso
- 1/4 cup mirin
- 2 tablespoons sake or dry white wine
- 2 tablespoons sugar
- 2 teaspoons sesame oil
- 4 pieces black cod fillets (about 6 ounces each)
- Chopped green onions (for garnish, optional)
- Steamed rice (to serve, optional)
- Pickled ginger (for garnish, optional)
Instructions:
- In a mixing bowl, combine the miso, mirin, sake, sugar, and sesame oil. Whisk until smooth.
- Place black cod fillets in a shallow dish. Pour marinade over the fish, ensuring each fillet is well-coated. Cover with plastic wrap or seal in a zip-top bag. Refrigerate for at least 30 minutes, preferably overnight for maximum flavor.
- Preheat your broiler on high (if using). Alternatively, preheat a grill pan over medium-high heat.
- Remove fillets from marinade (discard any leftover marinade). Place on a foil-lined baking sheet or grill pan.
- Broil or grill for 5-7 minutes, keeping an eye on it. The fish should become golden brown and caramelized on top.
- Remove the cod from the oven/grill, garnish with green onions if desired, and serve immediately with steamed rice and pickled ginger.
