Ingredients:

  • ⅓ cup white miso paste
  • ⅓ cup brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons sake or dry white wine
  • 1 tablespoon sesame oil
  • 4 black cod sablefish fillets, skin on
  • Salt and pepper, to taste
  • Sliced green onions for garnish (optional)
  • Sesame seeds for garnish (optional)

Instructions:

  1. In a mixing bowl, combine miso paste, brown sugar, soy sauce, sake, and sesame oil. Whisk until smooth.
  2. Rinse the black cod fillets under cold water and pat dry. Season lightly with salt and pepper. Coat the fish with the marinade.
  3. Place the coated fish in a baking dish or resealable bag and refrigerate for at least 1 hour.
  4. Preheat your oven to 400°F (200°C).
  5. Remove fish from marinade and shake off excess. Heat an oven-safe skillet over medium-high heat and sear the fish, skin-side down, for 3-4 minutes.
  6. Flip the fish and transfer the skillet to the oven. Roast for 5-8 minutes until fish flakes easily.
  7. Transfer fish to plates and garnish with green onions and sesame seeds as desired.
