Ingredients:
- ⅓ cup white miso paste
- ⅓ cup brown sugar
- 2 tablespoons soy sauce
- 2 tablespoons sake or dry white wine
- 1 tablespoon sesame oil
- 4 black cod sablefish fillets, skin on
- Salt and pepper, to taste
- Sliced green onions for garnish (optional)
- Sesame seeds for garnish (optional)
Instructions:
- In a mixing bowl, combine miso paste, brown sugar, soy sauce, sake, and sesame oil. Whisk until smooth.
- Rinse the black cod fillets under cold water and pat dry. Season lightly with salt and pepper. Coat the fish with the marinade.
- Place the coated fish in a baking dish or resealable bag and refrigerate for at least 1 hour.
- Preheat your oven to 400°F (200°C).
- Remove fish from marinade and shake off excess. Heat an oven-safe skillet over medium-high heat and sear the fish, skin-side down, for 3-4 minutes.
- Flip the fish and transfer the skillet to the oven. Roast for 5-8 minutes until fish flakes easily.
- Transfer fish to plates and garnish with green onions and sesame seeds as desired.
