Ingredients:

  • 1 ½ cups (180g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) brown sugar, packed
  • 2 large eggs, at room temperature
  • ½ cup (120ml) vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 ½ cups (150g) grated zucchini (about 1 medium zucchini)

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease the loaf pan or line it with parchment paper.
  2. In a bowl, whisk together the dry ingredients: flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another large bowl, blend the sugars, eggs, oil, and vanilla until well combined.
  4. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined (do not overmix).
  5. Fold in the grated zucchini until evenly dispersed.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
