Ingredients:

  • 250g all-purpose flour
  • 300g granulated sugar
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 115g premium white chocolate bar, finely chopped
  • 170g unsalted butter, slightly softened
  • 240ml whole milk, divided
  • 3 large eggs, room temperature
  • 1 tsp clear vanilla extract
  • 225g white chocolate, melted and cooled
  • 340g unsalted butter, cool room temperature
  • 375g powdered sugar, sifted
  • 2 tbsp heavy cream
  • 1 pinch fine sea salt

Instructions:

  1. Preheat your oven to 350°F (175°C). In a double boiler, melt 115g of chopped white chocolate with 1/4 cup of the milk. Stir until smooth and set aside to cool.
  2. In a stand mixer bowl, combine the flour, sugar, baking powder, and salt. Add the softened butter (170g unsalted butter, slightly softened) and the remaining milk. Mix on low speed until the mixture resembles wet sand.
  3. Whisk the eggs and vanilla into the melted chocolate-milk mixture (from step 1). With the mixer on low, slowly stream this liquid emulsion into the flour mixture until fully incorporated. Incorporate the 225g melted and cooled white chocolate into the batter at this stage.
