Ingredients:

  • 1 cup (90g) oat flour
  • 1/3 cup (80g) cashew butter
  • 3 tbsp (45ml) maple syrup
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (1.5g) sea salt
  • 1/3 cup (60g) mini semi-sweet chocolate chips
  • 1/2 cup (90g) dark chocolate chips
  • 1 tbsp (15g) coconut oil

Instructions:

  1. In a medium mixing bowl, combine the oat flour and salt. Add the nut butter, maple syrup, and vanilla extract.
  2. Stir with a spatula until the mixture transforms from a crumble into a thick, cohesive paste.
  3. Fold in the mini chocolate chips until evenly distributed.
  4. Scoop approximately 1 tablespoon of dough and roll it between your palms to create a smooth, spherical ball. Place each ball on a parchment-lined baking sheet.
  5. Melt the dark chocolate and coconut oil in 30-second intervals in the microwave, stirring in between until glossy.
  6. Using a fork, dip each ball into the chocolate, lifting it to let the excess drip off.
  7. Place the balls back on the parchment and refrigerate for 15 minutes until the shell is firm.
