Ingredients:
- 1 cup (90g) oat flour
- 1/3 cup (80g) cashew butter
- 3 tbsp (45ml) maple syrup
- 1 tsp (5ml) vanilla extract
- 1/4 tsp (1.5g) sea salt
- 1/3 cup (60g) mini semi-sweet chocolate chips
- 1/2 cup (90g) dark chocolate chips
- 1 tbsp (15g) coconut oil
Instructions:
- In a medium mixing bowl, combine the oat flour and salt. Add the nut butter, maple syrup, and vanilla extract.
- Stir with a spatula until the mixture transforms from a crumble into a thick, cohesive paste.
- Fold in the mini chocolate chips until evenly distributed.
- Scoop approximately 1 tablespoon of dough and roll it between your palms to create a smooth, spherical ball. Place each ball on a parchment-lined baking sheet.
- Melt the dark chocolate and coconut oil in 30-second intervals in the microwave, stirring in between until glossy.
- Using a fork, dip each ball into the chocolate, lifting it to let the excess drip off.
- Place the balls back on the parchment and refrigerate for 15 minutes until the shell is firm.
