Ingredients:

  • 1 ½ cups graham cracker crumbs (150g)
  • ½ cup unsalted butter, melted (115g)
  • ¼ cup granulated sugar (50g)
  • 1 cup creamy peanut butter (240g)
  • 8 oz cream cheese, softened (225g)
  • 1 cup powdered sugar (120g)
  • 1 tsp vanilla extract (5ml)
  • 1 cup heavy whipping cream (240ml)
  • ½ cup whipped cream (optional for serving) (120ml)
  • Chopped peanuts (for garnish, optional)

Instructions:

  1. Combine graham cracker crumbs, melted butter, and granulated sugar in a bowl. Press the mixture into the bottom and sides of a 9-inch pie dish.
  2. In a mixing bowl, beat the softened cream cheese until smooth. Add the peanut butter, powdered sugar, and vanilla extract; mix until well combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Fold the whipped cream into the peanut butter mixture gently.
  4. Spoon the peanut butter filling into the prepared crust, smoothing the top with a spatula.
  5. Cover and refrigerate for at least 2 hours or until set.
  6. Garnish with whipped cream and chopped peanuts if desired. Slice and enjoy!
