Ingredients:

  • 2 boxes (20 total) Little Debbie Christmas Tree Cakes
  • 4 oz Full-Fat Cream Cheese, softened
  • 16 oz High-Quality White Candy Melts or almond bark
  • 1 teaspoon Shortening or Refined Coconut Oil (optional, for thinning)
  • 2 tablespoons Green Sanding Sugar
  • 1 tablespoon Red Sanding Sugar or holiday sprinkles

Instructions:

  1. Crumble the Cakes: Place all Christmas Tree Cakes (including the frosting and coating) into a food processor. Pulse until they form a very fine, uniform crumb, resembling damp sand. Alternatively, crush thoroughly with a rolling pin in a zip-top bag.
  2. Combine Ingredients: Transfer the crumbs to a large mixing bowl. Add the softened cream cheese.
  3. Mix: Use a spatula or your hands to thoroughly combine the ingredients until a sticky, uniform 'dough' forms. Ensure no large lumps of cream cheese remain.
  4. Chill: Cover the bowl and place the truffle dough in the refrigerator for 30 minutes. This makes the dough easier to handle and roll.
  5. Roll the Balls: Use a small cookie scoop (1 tablespoon size) to portion the dough into 1-inch balls (approx. 25g each). Roll quickly between your palms to smooth.
  6. Second Chill: Place the rolled balls onto a baking sheet lined with parchment paper. Return the sheet to the refrigerator for another 15 minutes while you prepare the coating.
  7. Melt the Coating: Place the candy melts in a deep, microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly between each, until completely smooth. If too thick, stir in 1 teaspoon of shortening or coconut oil.
  8. Dip: Using a dipping fork or toothpick, dip one truffle ball completely into the melted coating. Tap the fork gently on the side of the bowl to allow excess chocolate to drip off.
  9. Set and Decorate: Immediately place the coated truffle back onto the parchment-lined sheet. While the chocolate is still wet, liberally sprinkle with green sanding sugar and add a few contrasting red accents.
  10. Repeat and Harden: Continue this process until all truffles are dipped and decorated. Return the tray to the refrigerator for at least 60 minutes until the coating is hard and fully set. Store in the refrigerator until ready to serve.
