- 1 cup Natural Peanut Butter (Smooth or Crunchy, unsalted)
- 1/3 cup Honey or Maple Syrup
- 1 teaspoon Vanilla Extract
- 1 cup Old-Fashioned Rolled Oats
- 1/2 cup Vanilla or Unflavoured Protein Powder
- 2 tablespoons Ground Flaxseed or Chia Seed
- 1/4 cup Mini Dark Chocolate Chips
- 1/4 teaspoon Fine Sea Salt
Instructions:
- Combine Wet Ingredients: In the large mixing bowl, thoroughly combine the peanut butter, honey (or maple syrup), and vanilla extract. Mix until completely smooth and homogenous.
- Add Salt: Stir in the 1/4 teaspoon of fine sea salt.
- Incorporate Dry Ingredients: Add the protein powder and ground flax/chia seed to the wet mixture. Mix until just combined.
- Fold in Oats: Gradually add the rolled oats, stirring until a very thick, sticky 'dough' forms. If too dry, add a tiny splash of water or milk.
- Fold in Chocolate: Gently fold in the mini dark chocolate chips.
- Chill: Line a small tray with parchment paper. Cover the bowl and refrigerate the mixture for a minimum of 30 minutes. This is essential for the balls to maintain their shape.
- Portion and Roll: Once chilled, use a small cookie scoop or a tablespoon to measure out equal portions. Lightly moisten your hands with water (to prevent sticking) and roll each portion quickly into a smooth, firm ball.
- Store: Place the finished balls onto the lined tray. Return the tray to the fridge for final setting before serving. Store in an airtight container in the refrigerator.
