Ingredients:

  • ½ cup caramel sauce
  • 8 oz mascarpone cheese, at room temperature
  • ¼ cup powdered sugar
  • 1 teaspoon pure vanilla extract

Instructions:

  1. Gather all ingredients and allow mascarpone cheese to come to room temperature.
  2. In a medium mixing bowl, add heavy cream and whip using an electric mixer or whisk until soft peaks form.
  3. In another bowl, combine mascarpone cheese, caramel sauce, powdered sugar, and vanilla extract. Whisk until smooth and well-combined.
  4. Gently fold the whipped cream into the mascarpone mixture using a spatula, taking care not to deflate the cream.
  5. Taste the icing and adjust sweetness if necessary, adding more powdered sugar or caramel if desired.
  6. Use immediately for frosting or store in the refrigerator until needed. If storing, re-whip gently before using.
