Ingredients:
- 1.5 lbs (680g) beef tips (such as sirloin or tenderloin), cut into 1-inch cubes
- 2 tablespoons (30g) olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup (240ml) beef broth
- ½ cup (120ml) red wine (optional; can substitute with extra broth)
- 2 tablespoons (30ml) Worcestershire sauce
- 1 teaspoon (2g) dried thyme
- 1 teaspoon (6g) salt
- ½ teaspoon (2g) black pepper
- 1 tablespoon (8g) cornstarch (optional, for thickening)
Instructions:
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a Dutch oven over medium-high heat. Add beef in batches, searing until browned on all sides. Remove and set aside.
- In the same pot, add onion and garlic. Sauté until translucent.
- Pour in red wine (if using) and scrape the bottom to release browned bits. Add beef broth and Worcestershire sauce.
- Stir in thyme, salt, and pepper.
- Return beef to the pot
- Cover pot with a lid and place in the preheated oven. Bake for 1 hour.
- After baking, if desired, mix cornstarch with a little water and stir into the sauce to thicken. Return to oven uncovered for an additional 15-20 minutes.
- Remove from oven and let rest for a few minutes before serving.
