Ingredients:

  • 1.5 lbs (680g) beef tips (such as sirloin or tenderloin), cut into 1-inch cubes
  • 2 tablespoons (30g) olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup (240ml) beef broth
  • ½ cup (120ml) red wine (optional; can substitute with extra broth)
  • 2 tablespoons (30ml) Worcestershire sauce
  • 1 teaspoon (2g) dried thyme
  • 1 teaspoon (6g) salt
  • ½ teaspoon (2g) black pepper
  • 1 tablespoon (8g) cornstarch (optional, for thickening)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a Dutch oven over medium-high heat. Add beef in batches, searing until browned on all sides. Remove and set aside.
  3. In the same pot, add onion and garlic. Sauté until translucent.
  4. Pour in red wine (if using) and scrape the bottom to release browned bits. Add beef broth and Worcestershire sauce.
  5. Stir in thyme, salt, and pepper.
  6. Return beef to the pot
  7. Cover pot with a lid and place in the preheated oven. Bake for 1 hour.
  8. After baking, if desired, mix cornstarch with a little water and stir into the sauce to thicken. Return to oven uncovered for an additional 15-20 minutes.
  9. Remove from oven and let rest for a few minutes before serving.
