Ingredients:

  • 400g (14 oz) all-purpose flour, plus extra for dusting
  • 340g (12 oz) lukewarm water (about 85-90°F / 29-32°C)
  • 4g (1/2 teaspoon) active dry yeast
  • 8g (1 1/2 teaspoons) fine sea salt
  • 1 tablespoon olive oil, plus more for coating the bowl
  • Pizza sauce (homemade or store-bought)
  • Shredded mozzarella cheese
  • Pizza toppings (pepperoni, mushrooms, peppers, olives, etc.)
  • Fresh basil leaves (optional)
  • Grated Parmesan cheese (optional)
  • Chili flakes (optional)

Instructions:

  1. In a large bowl, whisk together the flour, yeast, and salt.
  2. Pour in the lukewarm water and olive oil. Stir until just combined.
  3. Cover the bowl and let it rise at room temperature for at least 12 hours, or up to 24 hours.
  4. Turn the dough out onto a floured surface. Divide in half and shape into balls.
  5. Place each dough ball in an oiled bowl. Cover and let rise for another 30 minutes to 1 hour.
  6. Preheat your oven to the highest temperature with a baking sheet or pizza stone inside.
  7. Stretch or roll out one dough ball and place it on parchment paper. Top with sauce, cheese, and toppings.
  8. Slide the pizza onto the preheated baking sheet or pizza stone. Bake for 12-18 minutes.
  9. Let the pizza cool for a few minutes before slicing and serving.
