Ingredients:
- 1 cup (240g) unsalted peanut butter
- 1/2 cup (100g) granulated sugar
- 1/2 cup (100g) packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup (90g) rolled oats
- 1 cup (120g) all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (90g) chocolate chips (optional)
Instructions:
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine peanut butter, granulated sugar, and brown sugar. Mix until creamy and well combined.
- Add the egg and vanilla extract to the mixture. Whisk until smooth.
- In a separate bowl, mix the rolled oats, flour, baking soda, and salt. Stir to combine.
- Gradually add the dry ingredients to the wet mixture. Stir until just combined, then fold in chocolate chips if using.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the cookies are lightly golden around the edges.
- Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
