Ingredients:

  • 1 cup (240g) unsalted peanut butter
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (90g) rolled oats
  • 1 cup (120g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (90g) chocolate chips (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine peanut butter, granulated sugar, and brown sugar. Mix until creamy and well combined.
  3. Add the egg and vanilla extract to the mixture. Whisk until smooth.
  4. In a separate bowl, mix the rolled oats, flour, baking soda, and salt. Stir to combine.
  5. Gradually add the dry ingredients to the wet mixture. Stir until just combined, then fold in chocolate chips if using.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes or until the cookies are lightly golden around the edges.
  8. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
