Ingredients:

  • 4 (6 oz or 170 g) fillets of fish (such as salmon, cod, or tilapia)
  • 2 tablespoons (30 ml) olive oil
  • 1 teaspoon (5 g) kosher salt
  • ½ teaspoon (2 g) black pepper
  • 1 teaspoon (2 g) garlic powder
  • 1 teaspoon (2 g) dried parsley or fresh parsley, chopped
  • 1 lemon, sliced
  • 4 tablespoons (60 g) unsalted butter
  • 2 tablespoons (30 ml) fresh lemon juice
  • 1 teaspoon (5 g) fresh dill (or ½ teaspoon dried dill)
  • Zest of 1 lemon

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Pat fish fillets dry using paper towels and place them in a baking dish, skin-side down (if applicable).
  3. Drizzle olive oil over the fillets and sprinkle salt, pepper, garlic powder, and parsley evenly over them. Top with lemon slices.
  4. Melt butter and whisk in lemon juice, dill, and lemon zest until blended.
  5. Pour a portion of the lemon butter sauce over the fish. Cover the dish with foil (optional) and bake for 20-25 minutes, until the fish flakes easily with a fork.
  6. Remove the fish from the oven and drizzle with more lemon butter sauce if desired. Garnish with extra parsley and serve immediately.
