Ingredients:
- 4 (6 oz or 170 g) fillets of fish (such as salmon, cod, or tilapia)
- 2 tablespoons (30 ml) olive oil
- 1 teaspoon (5 g) kosher salt
- ½ teaspoon (2 g) black pepper
- 1 teaspoon (2 g) garlic powder
- 1 teaspoon (2 g) dried parsley or fresh parsley, chopped
- 1 lemon, sliced
- 4 tablespoons (60 g) unsalted butter
- 2 tablespoons (30 ml) fresh lemon juice
- 1 teaspoon (5 g) fresh dill (or ½ teaspoon dried dill)
- Zest of 1 lemon
Instructions:
- Preheat the oven to 350°F (175°C).
- Pat fish fillets dry using paper towels and place them in a baking dish, skin-side down (if applicable).
- Drizzle olive oil over the fillets and sprinkle salt, pepper, garlic powder, and parsley evenly over them. Top with lemon slices.
- Melt butter and whisk in lemon juice, dill, and lemon zest until blended.
- Pour a portion of the lemon butter sauce over the fish. Cover the dish with foil (optional) and bake for 20-25 minutes, until the fish flakes easily with a fork.
- Remove the fish from the oven and drizzle with more lemon butter sauce if desired. Garnish with extra parsley and serve immediately.
